I wonder about the wheat, too?
maybe it had to do with wheat being quite energy intensive, and thus using lots of fossil fuels (as did meat) so the reduction was for conserving oil… (at least transportation of that wheat…)I wish I could find a larger version suitable for print, I kinda want to get this up in my co-op!
