Things That Can be Carried on a Bike (#385 & 386), and an easy recipe for Whole Wheat Ezekiel Bread

First photo (on my way to work in the morning)…two plastic bowls containing the beginnings of Ezekiel Bread; the preferment in one bowl and autolyse in the other. Second photo (on my way home in the late afternoon)…two empty plastic buckets, and three freshly baked loaves of Ezekiel Bread. To see photos of this breadContinue reading “Things That Can be Carried on a Bike (#385 & 386), and an easy recipe for Whole Wheat Ezekiel Bread”

Whole-Wheat Chickpea-Turmeric Bread, an interesting Ezekiel Bread variation…sort of

Beautiful, isn’t it? This is just another example that you can make bread out of nearly anything you like. I happen to like chickpeas, and try to put turmeric in a lot of things because of the yellow hue it offers, but mostly because turmeric is so good for you. While the dough looks reallyContinue reading “Whole-Wheat Chickpea-Turmeric Bread, an interesting Ezekiel Bread variation…sort of”

Things That Can be Carried on a Bike (#473)

A plastic dough rising bucket and two loaves of freshly baked whole wheat bread (made with just four ingredients). Urban Simplicity.

The Ezekiel Bread that Almost Wasn’t…

In order to explain the title of this post I have to tell a brief story. And the reason I tell this story is that I am a firm believer that good food can come out of mishap, or at least a near mishap. But I’m getting ahead of myself. The above picture is thatContinue reading “The Ezekiel Bread that Almost Wasn’t…”

Just Four Ingredients (OK, Five)

“Simplicity is the ultimate sophistication.” Leonardo da Vinci  That beautiful loaf of bread pictured above was made with the four basic bread ingredients: flour, water, yeast, and salt. The best part is that it was made with 100% whole wheat flour. That’s the reason I added a tablespoon of vital wheat gluten to the recipeContinue reading “Just Four Ingredients (OK, Five)”

Whole Wheat Ezekiel Bread Recipe

I haven’t posted this recipe or a variation of it in a while (actually, I haven’t made it in a while) so thought that I would. I’ve mentioned before that, oddly, with all the various content on this blog this recipe is still the number one reason first time visitors find their way here. SoContinue reading “Whole Wheat Ezekiel Bread Recipe”

100% Whole-Wheat Wild Rice Bread

I made this bread today because I happened to come across a package of wild rice I had in my freezer from at least a year ago. It’s similar to any of the whole wheat bread recipes on this blog–including the Ezekiel Bread recipe–with the exception that it contains wild rice. Delicious…anyhow, here’s the recipe.Continue reading “100% Whole-Wheat Wild Rice Bread”

Two Loaves of Ezekiel Bread, a Pizza, and Why it Took Nearly 48 Hours to Make them

Firstly, this post is not about how to make Ezekiel Bread, per se, but more about how to incorporate bread making into the rhythm of your daily life rather than upsetting it. I have always thought, and still do, that the bread mostly makes itself, we simply provide the correct conditions and guide it along.Continue reading “Two Loaves of Ezekiel Bread, a Pizza, and Why it Took Nearly 48 Hours to Make them”

Oatmeal-Flax Bread (whole wheat, of course)

In an effort to make ever healthier breads, this is my latest one. It’s really just a variation on a them of whole wheat breads. This one simply includes oatmeal and flax seed. The big difference is that you have to add even more water to the dough because the oatmeal and flax absorb some.Continue reading “Oatmeal-Flax Bread (whole wheat, of course)”

Whole Wheat Maple-Oatmeal Bread (recipe, pics, and step-by-step instructions)

It’s interesting, I think, in that I post on this blog everyday, sometimes more than once, and write about all sorts of things–mostly things related to bicycling, cooking, living simply, and things that inspire me–but still the most common reason people visit this blog is for Ezekiel Bread Recipes. Well, fellow whole grain bakers, I’mContinue reading “Whole Wheat Maple-Oatmeal Bread (recipe, pics, and step-by-step instructions)”

Le Levain

7/99, as in July 1999…this is my 13-year-old levain (sourdough starter) which I brought out of hibernation. I’ve yet to make 100% whole wheat bread with a natural starter…this is next on my list. After that, naturally leavened whole wheat Ezekiel Bread. I’ll keep you posted. In the meantime, if you want to read moreContinue reading “Le Levain”

The recipe below is one that I’ve made plenty of timesContinue reading “Things That Can be Carried on a Bike (#411)…and a recipe”

Urban Simplicity @ Facebook

Yes…I know. Facebook is one of those love-it or not things that exists in the modern world in which we live. I have had a personal Facebook page for a while and have thought about an Urban Simplicity page for sometime. Anyhow, I just got around to creating it. So if you are inclined toContinue reading “Urban Simplicity @ Facebook”

100% Whole Wheat Bread

The Goodness of Beer

The above image is The Waitress by Edouard Manet A little over a week ago I posted this recipe for Potato Bread with Beer…and also stated that it was not made with 100% whole wheat flour. Which is fine…it’s still a very good recipe, but these days I prefer whole wheat. Anyhow I thought I’dContinue reading “The Goodness of Beer”

Potato Bread with Cheddar, Beer, and Onion (recipe and photos)

The below recipe is one that I’m working on for an article for an upcoming issue of Artvoice magazine, it’s about cooking with beer. The only liquid in the pictured bread is–you guessed it–beer. The recipe does not contain 100% whole wheat flour as when I write for paid publication I tone it down aContinue reading “Potato Bread with Cheddar, Beer, and Onion (recipe and photos)”

Ezekiel Bread…yet another variation

Beautiful isn’t it? It’s a slice of a loaf of Ezekiel Bread I made yesterday and had for breakfast and lunch today. It’s airy but not too airy…firm enough to make a nice sandwich bread but at the same time soft enough that most people–even those used to supermarket bread–would enjoy it. You can seeContinue reading “Ezekiel Bread…yet another variation”
